Cooking time: 10-12 mins. Serves 5-6
1kg minced lamb
2 medium onions, peeled and finely chopped
90g flat leaf parsley, chopped
1tsp ground cinnamon
1/2tsp black pepper
- Place the minced meat, onions, parsley, cinnamon, allspice, black pepper, cumin and salt in a food processor. Process briefly until well mixed. Alternatively, mix well by hand for a ‘chunkier’ mixture.
- Transfer to a bowl, cover and refrigerate for 2 hours for the flavours to develop.
- Divide the mixture into 18 equal portions and form each one into fingers about 12cm long. Thread each finger onto a skewer. Grill over coals, or under a domestic grill for around 10 – 12 minutes turning frequently until they are well done.
- Serve with pitta bread and salad.
